According to tradition, at the time when the Greek kings had outlawed Judaism, there was very little oil left at the time of rededication that the Greeks had not spoiled. The temple menorah was to burn throughout the night, every night and there was only enough oil left for one night. Miraculously, the temple menorah burned for eight days, and a festival was declared to commemorate this event.
